Handing down the closely-guarded shochu production techniques of the Kurose Touji craftsmen

A stone's throw away from Toujinosato lies the community of Kurose, which had little farmland. A group of men from this community, the Kurose Touji, mastered shochu production techniques and greatly influenced shochu production throughout Kyushu. The Kurose Touji make shochu by hand, an endeavor which relies on experience. As shochu production becomes increasingly mechanized, handmade shochu is fading away. Toujinosato Kasasa was established to hand down Kasasa's cherished Kurose Touji skill and introduce people to the flavor of authentic handmade shochu. The exclusive brand Iddon is made with traditional techniques in order to keep them alive. However, because Iddon is produced in limited quantities, it is only sold to people who are chosen in a drawing.
