The menu is based on two main flavours: "Danrei," from flavourful extracts of dried sardines, kelp, shiitake mushrooms, vegetables, and citrus fruits, and "Hojun," a collagen-rich soup made from chicken stock. Another feature of their ramen is that each bowl is topped with daily seasonal vegetables for that additional splash of colours.
